July 2026 Restaurant Market Signals Report | New Openings

This report examines four restaurant companies that crossed operating thresholds during the November 2025–June 2026 tracking period.

The analysis focuses on threshold movement among emerging restaurant concepts and growth-stage restaurant companies. Slice House, Juiceland, Walk-On’s Sports Bistreaux and Guthrie’s Chicken Fingers are presented as company-level examples of the same Expansion Pressure Index™ framework, which evaluates verified development activity, geographic expansion and movement between operating stages.

RestaurantData monitored 1,144 expanding restaurant companies across three operating-stage cohorts during the study period, including 859 companies with 5–24 units, 169 companies with 25–49 units and 116 companies with 50–100 units. Companies within these cohorts are evaluated using the Expansion Pressure Index™ based on verified development activity, geographic expansion and recent growth patterns. The four companies featured below are representative examples of operators that crossed significant operating thresholds during the reporting period.

Cohort Size and Threshold Movement

The examples in this report come from broader company-size cohorts. Companies are compared with operators of similar scale during the same tracking period so that expansion activity is evaluated within a relevant comparison group.

The 30-unit and 70-unit marks used in this report are analytical thresholds rather than the boundaries of the three monitoring cohorts. They help identify companies reaching a new level of operating scale while allowing their expansion activity to be compared with similarly sized businesses.

Crossing a threshold does not by itself determine an Expansion Pressure Index™ tier. The rating also reflects the pace, geographic distribution, recency and verification strength of the company’s tracked development activity.

Expansion Activity and Business Prioritization

Organizations that serve the restaurant industry often organize coverage by account size, segment, territory, category or recent activity. Unit count provides one view of business size. Current development activity provides another view of direction and movement.

The index does not prescribe a business decision. It presents verified evidence of expansion direction and relative activity so readers can interpret the findings within their own planning and prioritization processes.

How to Read the Model

The model compares companies within a selected size segment and tracking period. It weighs recent unit growth, growth velocity, multi-state presence, new-market expansion, recency and momentum, and verification strength.

Verification strength reflects the number and quality of independent source types supporting a company’s tracked activity, including D/B/A filings, permits, licensing records, local reporting and other publicly available sources.

Companies are grouped into four pressure tiers: Very High, High, Moderate and Watch.

Very High indicates the strongest relative expansion pressure within the comparison group during the tracking window. High and Moderate indicate verified growth at progressively lower levels of velocity, geographic reach or concentration. Watch identifies expanding companies with lighter tracked activity relative to others in the same size cohort. These operators are growing, but their current development patterns warrant continued monitoring rather than the same level of immediate prioritization as higher-tier companies.

A higher tier indicates stronger relative expansion pressure within the same size segment during the selected period. It does not measure company quality, financial performance, management effectiveness or investment potential. Adapting the Model to Your Own Segmentation

The cohort boundaries shown in this report represent one configuration used for this analysis. They are not fixed.

Organizations segment their markets differently. Some divide accounts into SMB, mid-market and enterprise. Others organize by territory, category or purchasing volume. Stage ranges can be redefined to match an organization’s account structure and adjusted as coverage models change.

A sales team that treats 50 units as the enterprise line can set the stage range there. A market analyst comparing operators between 15 and 45 units can define that band directly. Rankings and pressure tiers are recalculated within the selected segmentation so that expansion activity is measured against the relevant comparison set.

Understanding the Unit Counts

The unit movement shown in this analysis is based on verified restaurant development activity captured by RestaurantData during the November 2025–June 2026 tracking period. The figures are intended to show the direction, pace and geographic pattern of each company’s identified growth rather than claim a complete real-time accounting of every company location.

The location records presented for each company represent openings and development events identified and verified through RestaurantData’s research process. Additional openings, closures, announcements or projects may exist outside the records captured during the study period.

RestaurantData’s analysis of 2,698 opening projects from March through May illustrates the pace at which the underlying record base changes. Tracked unit counts may therefore differ from totals reported by a company, franchise disclosure documents or other sources by the time this report is read.

Companies Crossing the 30-Unit Threshold

For emerging restaurant concepts, passing approximately 30 locations can indicate movement beyond the earliest stage of expansion. The threshold provides context for identifying companies developing greater operating scale and comparing the strength of their recent growth patterns.

These verified development records show expansion across several metropolitan areas rather than concentration in one market. The geographic spread and number of identified projects support Slice House’s Very High expansion pressure rating.

Verified Juiceland Expansion Locations

The six Juiceland records below contributed to the company’s measured movement from 28 to 34 tracked units during the study period. The activity remained in Texas but extended across six counties.

Juiceland’s tracked activity remained within Texas, but the verified records span the Houston, San Antonio, Austin and Dallas-Fort Worth markets. The pace of identified development across multiple trading areas supports its Very High expansion pressure rating despite the absence of multi-state expansion during the study period.

Restaurant companies approaching 70 locations have established greater operating scale, but their recent expansion patterns can still vary substantially. The examples below show two companies moving beyond that threshold with different levels of geographic distribution and development intensity.

Guthrie’s crossed the 70-unit threshold through steady verified development. Its tracked expansion remained concentrated in Alabama rather than extending into additional states, which contributed to a Moderate expansion pressure rating within the comparison group.

This analysis is based on restaurant development activity tracked by RestaurantData between November 2025 and June 2026. Development records are compiled from public records, including legal filings, permits, licensing records, local reporting and other publicly available sources. Companies are compared within similar operating ranges and the same tracking period. Individual locations and projects are treated as verified development events, while patterns across those records are used to assess growth direction, velocity, geographic reach and movement across operating thresholds.

The analysis is directional rather than a complete census of every company opening. Tracked unit movement reflects verified activity captured during the study period and should not be interpreted as a complete or real-time accounting of every operating, closed, announced or planned location on the publication date.
