Salata is a Houston, Texas fast casual salad franchisor headquartered at 16720 Park Row and built around a made-to-order salad bar line. While running a downtown Houston restaurant, Berge Simonian noticed that the line for salads was often longer than the line for hot food, so he and business partner Tony Kyoumjian spent months perfecting signature dressings, soups and sauces before opening the first Salata in late 2005. Franchising began the following year, and the brand grew from its Houston base into new markets while keeping its all-natural, gluten-free dressings produced centrally rather than bought off a supplier list. Nearly all restaurants are run by franchise partners. The footprint is rooted in Houston and across the South, with expansion along the Gulf Coast and the Southeast and into Southern California. Guests move down the line choosing from dozens of greens, vegetables, fruits, cheeses, nuts and proteins for salads and wraps, alongside soups, teas and lemonade for lunch and dinner. Typical restaurants seat roughly 50 guests in about 1,500 square feet.

The Restaurant Enterprise Index focuses primarily on companies with a substantial role in restaurant operations. Investment firms, financial sponsors, and other ownership partners are generally not included unless they also play a meaningful operating role; an otherwise qualifying entity may also be omitted when sufficient reliable information is unavailable.
The ownership hierarchy follows the entity structure from the bottom up, showing the profiled entity in relation to its parent organizations, including its ultimate parent. When the entity owns or operates concepts beneath it, up to three are displayed.
